Cheddar Rosemary Beer Bread


This is my first post in a loooong time! I made this amazingly easy bread last night to eat with dinner. This would be great with chili

Cheddar Rosemary Beer Bread

3 C all purpose flour
1/4 C sugar
1 1/2 tsp salt
1T baking powder
2 T dried rosemary
1 C shredded cheddar (plus a little more for the top)
red pepper flakes to taste (optional)
12 oz beer

Preheat oven to 375 degrees F.
mix everything in a bowl, put it in a loaf pan (the dough is pretty sticky), and sprinkle a little more cheddar and rosemary on the top, drizzle with a little olive oil. Bake at 375 for about 45 min. Eat it warm. Thank me later. PS you can easily vary this...cheddar jalepeno, parmesan sun dried tomato...etc

Gorgonzola Truffles


I had a girls night pot luck a few weeks ago and these were one of the fabulous appetizers that someone (Michelle) brought....they really are great and also great popped into a salad! The gorgonzola truffles are on the right on the plate with the grapes


4 oz. cream cheese, softened
1 (4-5 oz.) container crumbled gorgonzola (blue-cheese)
2 tsp. finely chopped onion
1/2 tsp. worcestershir sauce
1/4 tsp. black pepper
1/2 cup cooked and crumbled bacon
Grapes and/or apples and pear slices
1. Beat first 5 ingredients at medium speed until well combined. Cover tightly and chill at least 1 hour or until firm. (Can chill up to 3 days.)
2. Roll cheese mixture into 3/4 inch round balls. Roll each ball in bacon. Serve with apple and pear slices and grapes.

Easy Blue Cheese Dip

OK, you will laugh, but it is this easy:

Blue cheese crumbled (however much you want)
16 oz Low Fat Sour Cream
salt and pepper to taste

mix all ingredients and enjoy with veggies or on a burger. I say however much you want because some people like it really cheesy (like me)

Beer Cheese (it is a fon-do!)


OMG this is so addicting, I did not even know how good it was going to be. People were literally cleaning the crockpot with their fingers! I made this for my housewarming party, and had breadcubes for dipping, but you could use tortilla chips and veggies, pretzels, whatever tastes good with cheese! I made this on the stovetop and then kept it warm in the crockpot on the keep warm setting. This dip is even great once cooled and you spread it on crackers and bread. ***Photo is not mine, I found it on google from http://www.foodtv.ca/


Beer Cheese Fon-Do!

1 loaf crusty white bread (like sourdough), cubed
1 Tbsp butter
1 garlic cloves, minced
8 oz Velveeta, cut into cubes
8 oz low fat cream cheese cut up
1 T. spicy brown mustard (like guldens)
1 C Colby cheese, shredded
1 C pepper jack cheese, shredded
12 oz can beer (use a lager or darker beer)
few dashes hot sauce (to taste)
salt and pepper to taste

melt butter over med heat and saute garlic 1 minute. add velveeta, cream cheese, and mustard, and stir constantly til melted. Add shredded cheeses and keep stirring. Add beer a little at a time, stirring each time until combined. I used almost the entire bottle (except for about a swig), keep adding until it is the consistency you want. add hot sauce and salt and pepper. Pour into crock pot and put on low for about 20 minutes, then switch to keep warm. Serve with dippers.

Not Yo Mama's Cheesy Broccoli Casserole

So I bought the world's biggest bag of frozen broccoli at Costco last week and have been eating it steamed all week, I wanted something different, but any casserole similar to the classic green bean casserole makes me want to barf. So I made up my own. It is kind of like Macaroni and cheese minus the macaroni and add broccoli.

Not Yo Mama's Cheesy Broccoli Casserole
approximately 5 cups of frozen broccoli florets
1 T Butter
1 heaping T flour
1 1/4 C skim milk
1 oz velveeta, cubed
2 oz low fat mexican cheese blend, shredded (plus another 1/2 cup for sprinkling on top
4 oz Sharp cheddar, shredded
salt to taste

Preheat oven to 350 degrees F. Boil broccoli in salted water for about 8 minutes (10 if you like it softer). Drain, pat dry and set aside (you can do this while you are making the sauce, just make sure you pat dry a little because in mine I did not and in some spots there was some water.) Melt butter over med heat, then add flour and whisk, allow roux to cook until golden and no longer smelling like flour. Add milk slowly, whisking the entire time. Cook for another 2-3 minutes until it coats the back of a spoon. Take off the heat and add cheeses while whisking. Whisk until melted and smooth. Taste and add salt. Put broccoli (cooked) in casserole dish and pour cheese sauce over it and mix. Sprinkle remaining 1/2 C low fat cheese over top. Bake at 350 for 15 minutes covered and 5 minutes uncovered.
