Creamy Balsamic Dressing

It was delicious...a great way to store it is in a mason jar, because you can shake it up before serving. It makes almost a full mason jar and is absolutely delicious!!! I served it over a very simple salad of baby greens, grape tomatoes, radicchio, crumbled blue cheese and toasted sliced almonds. Try it!!!!
Ingredients:
2 cloves garlic, crushed (orig 4 cloves grated)
3 Tbsp low fat mayo (orig full fat...you won't miss it!)
2 Tbsp fresh lemon juice
1 tsp dijon mustard
1 Tbsp sugar
a few shakes Morton seasoned salt (I used this bc the original Morton's seasoning I could not find)
1 and 1/2 tsp sea salt
fresh ground pepper to taste
1/2 Cup balsamic vinegar
3/4 Cup Olive oil
1 Tbsp fat free half and half (I added)
combine all ingredients in a bowl and use immersion blender to emulsify or throw all ingredients in a blender/food processor to blend til smooth.
Life is too short to eat bad food. If it aint bitchin' it aint in my kitchen!

Orange Vinaigrette
so the original recipe was from Giada De Laurentis....my aunt made it at Christmas....such a great dressing...so light and tasty...AND easy! I made a few adjustments. I served this over baby arugula with crumbled blue cheese and honey roasted almonds.
Orange Vinaigrette
zest and juice of two oranges
2 Tbsp. white balsamic vinegar (can sub regular Balsamic Vinegar)
1 squirt balsamic glaze
2 Tbsp honey
1 small shallot, chopped
3/4 tsp sea salt
3/4 tsp fresh ground pepper
3/4 C extra virgin olive oil
add all ingredients to a blender (I used the magic bullet) and emulsify...easy as that!

low fat buttermilk blue cheese dressing
This was really great. I had leftover buttermilk from the irish soda bread that I made, and I hate to waste food....so I found a recipe on http://www.allrecipes.com/ for "The Best Blue Cheese Recipe" found here:
so I used low fat ingredients, a little bit more blue cheese and also used apple cider vinegar instead of white wine vin. It was so great---best if chilled for a couple of hours. You will never know it is healthy!!!!! Ill post a picture soon.
Low Fat Buttermilk Blue Cheese Dressing
2 and 1/2 Tbsp crumbled blue cheese (heaping tablespoons)
3 T low fat buttermilk
3 T low fat sour cream
2 T light mayo (only Helmann's)
2 tsp apple cider vinegar
1/4 tsp sugar
1/8 tsp garlic powder (I will use more next time)
salt and pepper to taste
Mix all ingredients together in food processor or blender until blended. I used my magic bullet and it worked great! I put lots of fresh ground pepper. mmmmmmmmm!
