chocolate chip cookie in a cup

Have you ever craved a freshly baked chocolate chip cookie, but did not feel like making a whole batch of cookies?!  Crave no more!!!  I bring you a single serving of chocolate chip cookie in a cup, made in the microwave....it is that easy!!!!

Chocolate Chip Cookie in a Cup (originally found on pinterest....this is not my recipe)

1 Tbsp. unsalted butter
1 Tbsp. white sugar
1 Tbsp. of packed light brown sugar
3 drops vanilla
1 egg yolk
1/4 Cup all purpose flour
2 Tbsp. chocolate chips
2 tsp. chopped walnuts (optional)

Melt butter in cup in microwave (about 20-30 sec).  Add sugars and vanilla and mix well with wooden spoon, add egg yolk, mix until incorporated.  Add flour and mix gently until combined.  Add chips and walnuts, if desired.  Microwave for 40-60 seconds....and if you are really daring, top it off with a small scoop of vanilla ice cream.  Enjoy!!!!!

Breast Cancer Bake Sale



We did Denim Day on Oct 24th at work and I decided to do a bake sale that day too all to benefit Breast Cancer Research. The staff at my job were sooo generous in both their donations to our bake sale and to denim day.....in all we raised over $260! I was so thrilled! One of my best friends lost her mom to Breast Cancer at a very young age, and because of that this cause is so close to my heart. I was inspired by Katie #s, and here is her recipe that I used for my cookies, that sold sooo quickly! I didnt make them that big, but I thought they were perfect!
White Chocolate Chip Pink M&M Cookies

Orig ATK (lifted from Katie102006)

2 Cups plus 2 Tbsp All purpose flour
1/2 tsp baking soda
1/2 tsp salt
12 Tbsp. (1 1/2 sticks) butter , softened (orig called for melted and cooled until warm)
1 C brown sugar packed
1/2 c granulated sugar
1 large egg, 1 yolk
1 Tbsp Vanilla extract
1 C pink m & m s
1 C white chocolate chips

Preheat oven to 325 degrees F. Whisk dry ingredients together, set aside. Mix butter and sugars together until thouroughly combined. Beat in egg, yolk and vanilla until blended.

Add dry ingredients and beat low speed until just combined. stir in m & ms and chocl chips.

Put by Tbsp onto baking sheet. Bake about 17 minutes .
Makes 4 dozen

Peanut Butter Chocolate Chip Bars

I think these are similar to Hello Dolly bars. I first got a taste of these in a cookie exchange at work and I am not sure where she got the recipe from, so sorry for no credit....but these are so great and very easy. No picture yet, Ill take one when I make it again!

Makes about 20

1/2 C butter
1 and 1/2 C Graham Cracker Crumbs
1 (14 oz) can sweetened condensed milk
2 C milk chocolate chips
1 C peanut butter chips

Preheat oven to 350. Melt butter over low heat. Place crumbs in a 13X9 inch pan and pour butter over them. Pour condensed milk evenly over that. Sprinkle chocolate and peanut butter chips over milk mixture and press down firmly. Bake 25-30 minutes.

Snickerdoodles



I am doing a cookie exchange at work, and figured I would make my fave cookie, snickerdoodles.... The original recipe is Mrs. Sigg's snickerdoodles from http://www.allrecipes.com/:


The only changes I made were I increased the white sugar to 3 T and ground cinnamon to 3 tsp at the end to roll the cookies in. These were the best snickerdoodles, so soft and yummy!!!!

Funfetti Cookies


I made the funfetti cookies that everyone always talks about---they came out great and were so easy!!! This basic formula would work with any cookie mix, I am going to try lemon next. I got the recipe off the side of the box.


Cake Cookies

1 box cake mix
1/3 C canola oil
2 eggs (I used 3 by mistake and added a little flour and they were fine)

Mix all ingredients together and drop by spoonfuls onto baking sheet. Bake at 350 degrees for about 9 minutes. Leave on the tray for one minute and transfer to rack to cool. Frost them if you like.


Here is a low cal version that I found on Trisha's One Tiny Pink Kitchen Blog that looked great!
1 box cake mix
1/2 c applesauce
1/2 c eggbeaters
Follow directions above (except it looks like she cooked them for about 12 minutes). Watch them closely after 9 ( : 1 ww point per cookie.

oatmeal and the kitchen sink cookies

Oatmeal and the kitchen sink Cookies
1 C butter
1 C light brown sugar (packed)
1/2 C white sugar
2 eggs
2 tsp vanilla extract
1 1/4 C all purpose flour
1/2 tsp baking soda
1 tsp salt
3 C oats
1/2 C chopped walnuts
1 C milk choc chips
1/2 C raisins (or craisins)
1/2 C coconut

Preheat oven to 350F. Cream butter and sugars. Beat in eggs, one at a time, stir in vanilla. Combine flour, baking soda and salt in a bowl. Stir flour mixture into butter mixture. Mix in oats, walnuts, choc chips, raisins and coconut.
Bake 12 min. Cool 5 minutes on baking sheet before transferring to wire rack. Makes approx 50 cookies
